Have you had her seen by a vet? It could be worms and/or needing some dental work. If she has not been well cared for, chances are, she's not been kept up on dental work. As horses get older, especially in their "golden years", they need more dental attention.

There is no photo, but she sounds like she may have "paw prints", which are colored spots found within the white of a pinto, and often (but not always) indicate the horse as being homozygous for pinto. Testing is the only way to know for sure. She would not be considered Pintaloosa.

And IF she is/was in foal, you should DEFINITELY be able to see and feel LOTS of hard foal movement.

If she is only 2 and came from a "questionable" place, she is probably overburdened with worms.

I am so very sorry for your loss. I see you are in AZ, and land of sand. Do you think it was sand colic? I am sure glad that living way up north where I do, it was never something we had to be cautious of. Poor little guy sounded like a real fighter though.
