I have been looking for the ultimate banana bread recipe all my married life (45 years in Feb). Thanks to Jayne I finally have it. :bgrin This recipe is to die for. If you haven't tried it please do so. If you like banana bread you'll love it. Can't say enough. Thank you sooooooo much Jayne.

Oh thanks for the review! :bgrin I have plans to try it out on family for the holidays...sounds so easy!

Thank you! Thank you!! I knew anyone who tried it would love it! It's sooo easy, and unlike most banana bread recipes, it doesn't have a cup of oil...although that package of cream cheese probably makes up for it! I also like this recipe because all of the ingredients are things I always have in my pantry or fridge, so I can whip it up any time if I have a couple of bananas needing a home.

So you don't have to look it up, here it is again:

Banana Cream Bread

Mix the following ingredients in the order given (I turn on my kitchenaid and just dump stuff in):

1 cup brown sugar

2 eggs

1/2 teaspoon salt

1 3/4 cup flour

2 mashed bananas (I don't mash 'em in advance, just chuck them in)

8 oz cream cheese

2 tablespoons oil

3/4 cup chopped nuts

1 teaspoon baking soda

Pour in a prepared loaf pan. Bake at 350 degrees for about an hour. My experience is that this loaf tends to take a little longer to cook than that, but it could be my oven or the type of pan I use. Just use the toothpick test to be sure.

I guarantee if you try this, you will never make another banana bread recipe again.

Can you use, the whipped cream cheese or does it has to be the block kind???

Will have to add this one as I mostly dislike nanner bread since it tends to be dryish or something.

Zucchini bread is another fave.

I wouldn't use whipped cream cheese, sour cream or change it in any way. It is not dry, very moist. If something works don't change it. :bgrin It is wonderful the way it is.

: In fact I had 4 bananas so I made a double batch. Ended up with 6 mini loaves. Have to get one or two down to Marnie.

I just tried it with the whipped cream cheese, I only asked because that is what I happened to have on hand without going to the store. It came out great. I will definately make it again. Next time I will try the block cream cheese just to see the difference, but the whipped worked good this time.

I've been thinking about this whipped cream cheese thing. I think the reason it worked is that the recipe calls for 8 oz of cream cheese. And wouldn't the whipped kind just have air whipped in? So 8 oz is 8 oz, unless the whipped has different ingredients to make it stay that way. Just a thought.

So did you use 8 oz of whipped? And now I'm wondering if the sour cream would work. Might be worth a try! I have that around the house more often than cream cheese.

I'm the type of cook who makes the recipe EXACTLY as written the first time, then I feel like I can play with it a little after that. If I really mess it up, at least I know the original still works!!
