Donna! I don't know if anyone else tried out the sweet potato souffle recipe you posted but I did and it was a big hit at Thanksgiving. Thank you so much for sharing that wonderful recipe. It's also going to the ER Christmas party with me where I'm sure it will meet with equal success. Thanks again!
Here's the recipe for those that want to try it.
3 cups cooked sweet potatoes(canned or fresh)
1/3 cup milk
1 cup sugar
3 beaten eggs
1/2 tsp salt
1/3 stick oleo
vanilla
mix the above ingredients and mash it together(can use an electric mixer). Spread the mashed sweet potatoes in a buttered casserole dish.
Topping:
1 cup chopped pecans
1cup brown sugar
1/3 cup flour
1/3 cup melted butter
mix the topping ingredients and spread over the top of the mashed potatoes. Bake at 350 degrees for about 35 minutes.
Absolutely to die for!!!
