My cousin and her son are coming for dinner and I would like this to be special. She takes care of my horses and dogs so that I can take vacations and spend time away from the farm. I pay her but also like to have a special meal that expresses my thanks. I welcome any and all ideas because I'm stumped. It's tomorrow at 6 PM so I need to get my rear in gear.

what about prime rib? I think just about everyone likes that and considers it 'special' (that is if your not a vegetarian)
 
Are they meat eaters? Hope so!

I have a LIST of meals with recipes depending on whether you want PORK, BEEF, CHICKEN......PM me.

Oh, and all are very easy, but make you look like you're a wiz in the kitchen. LOL.

Much as I love to eat, I have no talent for cooking, especially not able to do anything that could qualify out of my own house as "special"... but I thought of a good dessert, that I think is fairly easy to make (?). My mom makes it... Great for summer. Éclair Cake. Made with Graham crackers, chocolate frosting, cool whip and vanilla pudding. Nice, cool dessert but so decadent tasting. If it's of interest, there are lots of recipes on the internet

Sorry about that......it looks like a put a space in there that shouldn't have been. Well, I have everything under control and am just sitting waiting for the guests. I am doing Filet Mignon, baked potatoes, pink cement, napa cabbage salad, corn on the cob and bananas foster for desert. Thanks everybody for trying to help........I love my LB friends.

It sounds like an excellent dinner -- but what is pink cement?

Oh Jill, it's yummy and if you ever need an easy dish to bring give this a try. It's technically a desert.

Pink Cement

2 (8-ounce) packages of cream cheese

1 can Eagle brand sweetened condensed milk

1 can cherry pie filling

1 small container of Cool Whip (I use the fat-free)

1 can crushed pineapple + juice either (16-20 ounces)

1 small bag of mini marshmallows

Mix until creamy, the cream cheese and milk. Then add the cherry filling, crushed pineapple and cool whip. Mix. Then fold in the marshmallows. Chill.

(I like to let it chill for a couple of hours) Yummy!!

That Pink Cement sounds yummy, printed it out. How do you think it would be w/strawberry pie filling instead? I'm not crazy about cherry.
 
Hi Sonya, I think that would be fine. If you ever want a lighter version I have made it this way too..............

3 apples (peeled, sliced)

crushed pineapple + juices (16-20 ounce can)

1 C grapes

Fat Free Cool Whip (use whole container)

1 pkg. Fat Free white chocolate pudding

Stir all together then throw in mini marshmallows.......I probably use a cup. Chill. Enjoy! This is pretty tasty and probably a lot lower in fat.
