As many of you know our kitchen has been under renovation since LAST February. I am BEYOND sick of BBQ food ( I used to adore it), and since the weather is getting cooler, I'd like to do some crockpotting with new ideas.....Do any of you out there have original recipes or new ideas for crock pot meals?

I already have stew down pat, thank you Judy and Jody!

One of my favorites is a pot roast...very very simple!! Hunker down your roast in the crock pot with a bit of water after you've seasoned it. Then just add onions, carrots, potatoes celry and whatever other veggies you'd like in it...cover and let cook cook! Serve over rice when it's done...YUMMY...good fall and winter weather eating!
 
I've had three different versions of taco soup in the last month.

I actually loved them all.

Here's one of the ones I had. This was made on the stove, but I'm pretty sure you could cook it on low between 7-9 hours in the crock pot.

I just tried to find the one I made that was for a crock pot, but can't find it now. If you're able to do a google search on taco soup made with creamed corn you might find one that you can use if you don't want to use this one.

TACO SOUP

2 lbs hamburger

2 cans Rotel tomatoes (undrained)

2 cans diced tomatoes (undrained)

1 can (15 oz) pinto beans (undrained)

1 can chili beans (undrained)

2 cans sweet white corn (undrained)

1 can creamed corn

1 packet taco seasoning

1 packet of ranch seasoning

1 green pepper (chopped)

1 medium onion (chopped)

Shredded cheddar cheese, corn chips, tomato, lettuce (optional)

Brown beef. drain and add to stew pot. Add taco seasoning and ranch seasoning. Stir

Mix Rotel tomatoes, diced tomatoes, pinto beans, chili beans, corn, green pepper and onion.

Let simmer on med-high for 20 minutes

Add creamed corn last and mix well

Probably my best thing is my homemade chicken noodle soup

I have 2 crock pots large and super large so amounts varry depending on size and amount I am making

I don't really measure stuff.

1. can(s) of chicken broth and add water

2. two or three cut up baked chicken breasts

3. chopped up carrots and onions and celery

4. add noodles

I had this once at a friend's house and it was good and so easy:

Into your crockpot put:

-cut up pieces of chicken (whatever you like, what we had was a whole chicken cut up, but you could do just breasts, or thighs or whatever, but I do think you need pieces with bones for the best flavor)

-1 good sized jar of Prego or whatever spaghetti sauce you like.

That's it! It really comes out wonderful. Of course it's best served with pasta, but since you can't cook pasta, maybe you could serve it with some fresh italian/french bread and a salad. It would be nice to sprinkle some parmesan cheese on top when you serve it, but that's not necessary.

I just made a great big pot of awesome baked beans with a ham hock that is sooo good. I didn't even soak my beans overnight!

I put in a bag of great northern or navy beans, the ham hock and a bay leaf and put in boiling water until it was about 2 inches above the beans. I let it cook on high until the beans were almost soft. Take out the bay leaf and the ham hock, taking all the meat off and putting it back into the beans. Then I added a cup of ketchup, 1/2 a cup of molasses, 1/2 a cup of brown sugar, a squirt of mustard, an onion finely chopped and salt and pepper to taste. I let that cook until everything was done. It did take all day, but it was the best ever. I can't wait to make it again!

A friend sent me a website loaded with crockpot recipes :DOH! and I have already lost it........I will get it from her later today and post it.

There is a recipe on it for crockpot lasagna YUMMMMMMMM....... and there were other really different ideas.
 
These food posts always torture me!! :DOH! I'm hungry again..... :DOH!

Pot roast in the crock pot yummm...

Our stove has been NON operational for a week now...haven't gotten to town to purchase a new one yet so we have been grilling everyday....getting sick of it....

I make this also but I like to add sliced cabbage.

My MOL puts any kind of chicken pieces in with BBQ sauce, when its done the chicken is so tender it falls off the bone. Kathy
