Last year we shared Easter recipes, and I came across a new recipe that I love, so I thought it might be fun to do this year. We're eating at my Uncles this year (we rotate who hosts each year, I hosted last year) and he's making the ham. Im going to make the recipe I got from Eagles ring last year, and bake a cake for desert. Heck, I might even make pickled beets, but it's kind of late to start them, I normally like to let them sit for a week.

Ham Stuffing

1 cup... of butter

1 cup...sugar

1 large can crushed pineapple (well drained)

5 slices bread cut into cubes (no crust)

4 eggs

cinnamon

Cream butter and sugar, add eggs, beat well add Pineapple and stir in bread

Sprinkle with cinnamon

Greased pan...bake 1 hour at 350 degrees

This is VERY sweet, and comes out more like a desert bread budding than stuffing. I might cut the sugar a bit this year, and Im considering adding something like nuts. I always like to try new things with trusted recipes.

Nuts, yes...I love almonds in dressing...some dried cranberries would be good too...a bit af tart to counter the "very sweet".
