Hi guys. With Easter on Sunday, I thought I'd see what everyone has planned. I think I'm doing deviled eggs, ham, scalloped potatoes, some other yet-to-be-determined side, and cupcakes decorated kind of Easter-ish. I was wondering if you would be willing to share your scalloped potato recipes, there are so many ways to do them and I'm kind of bored with the old traditional way I do them here. Also, I'd love to get some ideas for the second side dish.

Do you plan to get Country (dry cured) or City (wet cured) ham? I'm fairly certain that I'm going to do a City ham just bcause they tend to be more moist. Do you have an opinion about which ham you think is better?

When I was growing up, my mother made her famous Leg of Lamb with all the fixings....... After she passed over, my dad would order a Honey Baked Ham and I would make the side dishes.

Now? Nothing is set is stone........I either serve a glazed ham or a pork roast tenderloin, depending on what's on sale. Side dishes include yams, my raw cranberry/orange relish, bread stuffing with apples and onion. Dessert is up for grabs too.... It's sometimes carrot cake.

I really got lucky this year. I dont have to have Easter at our house, its the first time EVER I am not having a holiday meal. My daughter is going to do it. But, I am going to make a few things and take it. I will be making Snickers Salad, Magic bars, broccoli salad, schram torte, or a baked cheesecake, and ..seems to be every holiday..polish sausage w/ sauerkraut/dumplings.
 
I have a recipe I got from a friend years ago

It's called Ham Stuffing but its really for those that like sweets

but goes very good with ham. and very easy to make

1 cup... of butter

1 cup...sugar

1 large can crushed pineapple (well drained)

5 slices bread cut into cubes (no crust)

4 eggs

cinnamon

Cream butter and sugar, add eggs, beat well add Pineapple and stir in bread

Sprinkle with cinnamon

Greased pan...bake 1 hour at 350 degrees

it is really good but I haven't made it in a few years

Snickers salad is just a really simple salad to make. It kinda looks like potato salad ..LOL.. but its made with frozen snickers candy bars, cool whip and apples. Here is the recipe ..its easy!

Snickers Caramel Apple Salad:

6 Snickers candy bars - chill and chop

6 apples- Granny Smith and /or red delicious- peeled, cored, and cut into bite size pieces, (about 3/4")

1- 12 oz. container Cool Whip

1 -small box of instant vanilla pudding-do NOT prepare like the box says to do,

1 cup of milk

Mix-cool whip, pudding and milk, add chopped apples and cut up snickers, refridgerate for 4-6 hours.

I have also heated up carmel ice cream sauce, just to the point of where I can "drizzle" it --and drizzled it over the top, and then sprinkle chop peanuts over that.

I always make this for our fall cookouts ..last of the season..and it taste like carmel apples. I have also made it with butterscotch pudding, and it was really good that way too.

The Snicker's salad has made it to my notebook. I will use that this year for sure, neat idea.

I looooove the Easter Bunny bread loaf too! I'm going to head to the store in the morning and give that one a try!
 
We had a no fuss Easter dinner. I had bought 2 hams at Christmas (long story) So we had frozen one of them. We had that. I took it to my Sister in Laws and had her cook it. I had to rescue it as she had it placed too high in the oven and the outside was burning. We then also had candied yams, mashed potato's and ham gravy for those that didn't want all of the sweet, Asparagus, dinner rolls, and strawberry short cake for desert. Easy and the best part was I took it all to my sister in laws house and she had to clean it all up.
