I will go through some of my cookbooks and see what I can find, but here's something that's easy and good, to get the ball rolling:
Put some dried apricots in a small plastic container that has a tight-fitting lid. Add orange juice to just barely cover the apricots. Cover and refrigerate overnight, then put the contents into a bowl and mash (with a fork or potato masher, or you can use a blender) and then spoon the mixture back into the plastic container. This is great in place of jam or jelly on toast (there's some pretty good whole-grain breads out there these days) and keeps in the fridge for a week or so. You can also replace some or all of the apricots with prunes, but the color of the resulting spread is less appetizing... Still tastes good, though.
I also highly recommend a new, non-dairy, non-hydrogenated butter replacement that's called Earth Balance. Comes in a tub and tastes really good (way better than margarine).
