I'm just wanting to know if you can bake cakes, cookies, pie crust & such using rice flour or potato flour cup for cup instead of ordinary wheat flour? Or do you have to add/substract a little bit to make the recipe turn out right?
 
Hello. I couldn't believe when I read your question. My Mother and I use rice flour and potato flour all the time. We have Celiac Disease. (For those who don't know what Celiac Disease is, it is a gluten intollerance - wheat flour, barley, malt, etc.) Do you have Celiac? If so, and if you have any questions, please feel free to PM me. My Mom is a cancer survivor for the past 15 years from this Disease and knows a whole bunch. I have been living with Celiac since 1996 and believe me, it isn't fun, but there are worse things that I could have.

Now, to answer your initial question, my Mom does all the baking. She has mastered it quite well. I will ask her for some recipes for you. One thing, using these flours, the cake is much more dense and sometimes "gritty". Mom has gotten to the point where the cakes are now moist and if someone didn't know that it was made without regular wheat flour, they wouldn't know the difference. I will get back to you with some recipes.
