This is a basic Stir fry recipe that would be suited to any type of meat, fish or Tofu.
And best of all its quick and easy
I was cooking for 2 so make alterations to the measurements to suit your guests.
3-4 Chicken thigh Fillets ( always find the best flavour from a chicken is found in the thigh )
1- Onion sliced
1/4- Capsicum (bell pepper) diced
10 Green Beans
10 Snow peas roughly diced
1/2 Zucchini
6-8 mini tomatoes ( quartered)
1 1/2 tablespoons of Fish sauce
2 tablespoons of sweet chilli sauce
2-3 tablespoons of ketchup Manis (sweet sticky soy)
1 tablespoon dried basil
Dice and fry up the chicken in a little olive oil and set aside once cooked.
Fry up the onion and capsicum for 30 seconds
Add the beans/ snow peas and Zucchini and fry for another 30 seconds - 1 minute.
Add the chicken back to the vegies along with the fish sauce and fry for 30 seconds]
Then add the sweet chilli and ketchup manis and the dried basil.
Stir fry for 30 seconds then remove from the heat.
Add the tomatoes, season with salt & pepper and serve.
I served this over mash potato and then rice. Both times it was great
