Oh... yesterday we were really bad. Carry out from McDonalds but it did hit the spot (such a craving). Tonight, we are having a chilli mac thing with some really good chilli I'd made earlier and froze part of + dreamfields pasta + some cheddar cheese, a salad and sour dough bread.

Wow,,, so many yummy sounding dinners everyone had! Lots of good ideas too.

Leia... it is hard to cook for one. What I do, is make a big batch of what ever I like, freeze it up in one person portions. Anytime I am too tired to cook.. just bring your home cooked meal out, heat and enjoy!

Yesterday i got home late, so just some Mac N Cheese Hamburger Helper, breadstick and applesauce.

Since it was Zac's birthday dinner, we had 3 of his (and our) favorite foods, steamed broccoli, steamed sweet potatoes and grilled rare steak....mmmm, and cupcakes, although my weird 2 year old wouldn't eat his~LOL We never eat dessert, so he's just not used to sugary stuff at night

On a different note, all 4 of us were out checking the cattle on the 4 wheeler yesterday (we have 2 4-wheelers, but it's more fun to ride together) and we were looking at our freezer steer for this year...his name is Hamburger. He came over to see us and Steve said "oh he's getting very friendly" and I said "I bet he'll taste great too"

Fixed something really fast. Chicken stuffing bake, salad, and corn. I just prepared StoveTop Chicken flavored stuffing like it was going into a bird, added a can of white meat chicken, a little extra onion and celery and baked in the oven for 20 minutes at 325. Forgot also had a little cranberry sauce with it.

I also was craving Thanksgiving early so that was my quick and easy way except used chicken instead of left over Turkey.

You all made me hungry just looking at what you had for dinner. YUM--beef strognoff

I also love to make my version of Dinty Moore beef stew for one, so if you have a family increase by the number of folks you have. This also freezes well.

Cut up about 1 pound of stew meat into bite size pieces (I use stew meat, or a very small chuck roast) remove most of the fat.

Cut up about 1 pound of carrots (I use the baby carrots and cut into thirds) and add 4-5 Idaho or 10-12 small red potatoes cut up in the same size. I sometimes add a little rough chopped onion or for a real change of taste a chopped up leek (if I have one around).

Season you meat (I use salt, pepper, garlic, a little steak seasoning) flour it and brown well in a skillet. Using the drippings I add about 2 Tablespoons additional bacon dripping and add enough additional flour to make a roue (sp), let it get a little dark (don't burn it). You could add a packet or jar of brown gravy to it as well but I use the roue.

Put your veggies (add a little salt & Pepper to them), meat, the roue into a ovenwear container with a lid and add water to cover, put into the oven at 250 degrees and cook either overnight or while at work. When you come home and are ready to eat, make a batch of cornbread, bisquits, or garlic toast add a salad and you are ready to go.

If there is any left, place in single serving microwave containers (I live alone) and freeze.

Poached fish (Basa) with steamed vegetables with basmati rice. Yeah, we're kind of boring and mostly healthy eaters around here.

Lazy meal. Costco rotisserie chicken, rice, veggies, garlic bread. No time to cook after picking up my son from soccer. Will make a strawberry,blueberry,blackberry,raspberry and vanilla soy milk smoothie for us later in the evening.
 
I have a client event tomorrow evening at a county club near my office. This is the menu

  • Mesclun Salad
  • Hot rolls
  • Combination Plate -- Grilled Shrimp and Pan Seared Petite Filet Mignon
  • Roasted Shiitake Mushrooms
  • Haricot Vert
  • Garlic Mashed Potatoes
  • Tomato tarragon sauce
AND, I forget what's for dessert but it sounded good when I picked it out

There's like four meals we routinely eat and that's all I was ever taught to make. Hard to learn when no one teaches....

Food is a mystery to me.

Edited to add: Don't get me wrong, my parents are both good cooks and can make plenty of things. We're just too tired to do more than broiled meat/veggie/other veggie-or-potatoes-or-pasta most nights.

peanut butter in chili???? The carrots I can see, but peanut butter??? That sounds gross, but next time we have chili I'm going to have to try it for myself. Tonight we are going out to eat....BW3's..aka Buffalo Wild Wings...it is one of my favorite restaraunts...we get hot wings (of course)...sour cream fries...and onion rings...yummy...I can't wait!

Yes peanut butter sandwiches dipped in chili.

When we were young in school and had chili-they always had a peanut butter sandwich too, thats where my husband got it, and passed on to my son..
