susanne

I love Chai, but the store versions are too sweet and not spicy enough, so I've been collecting recipes from the net and creating my own version. This is what I have so far...very good, but I'll always be working to make it even better. Does anyone have their own?
susanne's chai
This recipe makes about 4 dainty cups, or two big piggy cups like I serve it...
1/2 teaspoon ground cardamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamom
1/4 teaspoon ground cloves
1/8 teaspoon ground black pepper
1/2 t. fennel seeds
1/2 t. licorice root
4 cups milk (I use skim...one recipe suggested unsweetened, nonfat condensed)
sweetener (to taste)
1 vanilla bean (optional)
2 heaping tablespoons of black tea
1 In a 2-qt saucepan, add spices to 1 cup of water. Bring to a boil; remove from heat; let steep for 5-20 minutes, depending on how strong a spice flavor you want.
2 Add 4 cups of whole milk to the water and spices. Bring the milk and spice mixture just to a boil and remove from heat.
3 Add the tea to the milk and let steep for 5 to 10 minutes to taste. (Option at this point - reheat to a simmer and remove from heat.) You can add sweetener at this point, or serve without and let people add the amount they want.
4 Strain into a pot. Serve.
I've also combined equal parts of each ingredient (except only half as much cinnamon) and made a masala that I then microwave (gasp!) with milk, then add vanilla and sweetener and steep the tea in the brew.
