Chicken Veggie Soup is what I'm making this weekend. And if I'm making it, then you know it has to be easy. I think the ingredients are really to your own tastes...
A little bit of Olive Oil in a big pot...
Veggies (I'm using LOTS of mixed frozen, some fresh diced onions, and some fresh diced green peppers)
Let it go on medium, stir occasionally, for maybe 10-15 minutes
Add some Chicken Broth or Stock
Add the RAW chicken (I like to use un-boned chicken thighs -- the bones are easily separated when done).
Add your spices (I like some onion powder, celary salt, sea salt, parsley, and garlic)
Let this go for an our or so on low-medium, or until the chicken is done.
It goes well with small pasta if you want to add that, and I would imagine also rice. When I've made it, it seems to freeze well.
Not sure how a homemade, healthy soup could be easier
