I do this with my chard and spinach and it really works. So I tried it with the brussels sprouts I'm harvesting now and it works just as well. Put them in water until you are ready to deal with them. I stuff my greens in a cup or bowl, whatever is handy, then cover them with water. Sometimes it's several hours before I can deal with them, but they are always fine. If it is longer than several hours, put the dish in the fridge. I left my sprouts in the fridge in water for two days before I had a chance to cook them and they were just as nice as when I picked them--maybe even better. You don't have to clean them first, just as long as they are in the water. It's actually easier to clean them after they've been in the water for awhile.
For spinach and chard, after I stem them and wash them, I put them in a plastic bag with a paper towel in the fridge and they stay nice for a long time.
It's a terrible waste to pick your green stuff, then find it is a wilted mess when you get around to working with it.
