They've been coming in the house by the buckets and l really hate to pickle them because there pretty big..what else can a person make with them..thats easy.
 
My son and DIL have the same going on with there garden.I dont have a garden so they just keep bringing them over to me. So far,I have made Christmas pickles, slippery jims, and fridge pickles...all out of the big cucumbers. I am done with making ANY more pickles, with the exception of Shannon's (mini_lover) she sent me a jar last year..and those were some really good pickles

Not sure this is exactly what you are asking for as it's not to exciting but we always have sliced cucumbers with sour cream and boy are they good. Add a little salt and mmm....
 
slice them up and make bread and butter pickles. I used to with the japanese cucs. Oh they are so good. Just dont use pickling spices. The kind that all the spice is in one jar. Get them separately.

Every had cucumber sandwiches? Two slices of bread - one side with margarine or butter, the other side with mayo, lay sliced/skinned cukes inbetween and viola! (oops, that's French and cuke sands are British!)

Another one is slice cucumbers and marinade them in rice vinegar, olive oil, garlic, salt & pepper for an hour or part of a day........Place some butter lettuce and mandarin oranges on a salad plate....spoon the cukes with the marinade dressing over it. (The basic marinade is actually a variation of my regular oil and vinegar dressing that everyone here seems to lap up.)

My mom use to serve a wonderful recipe of cucumbers, sour cream, and vinegar to serve with salmon. It's buried in her recipe box, but if you'd like it let me know.

In a bigger mixing bowl put in a big scoop of sour cream, then pour in a couple of tablespoons of cider vinegar and a couple of tablespoons sugar. Add thinly sliced peeled cucumbers and thinly sliced sweet onion. Salt and pepper to taste. It's best to let it sit for about an hour before serving. YUM!!

I have a great bread and butter recipe if you want it, slice them put in jars in refrig. my kids wouldn't even let them get ready they would eat them the same day! Kathy
 
This is my favorite! In a bowl put cucumbers and onions(or if you dont like them then dont). The dressing is mayo, little milk, little vinager and suger to off set the tartness. Leave it sit in the frig. for awhile before eatting.

and send some my way, I will sure use them.
 
Cucumber veggie:

Slice cucumbers ( I peel them), in a pan heat oil with onions ( brown) put cucumbers in and cook til soft.

I give a spoon dill weed and chicken flavor bullion.

I like them plain w/ salt and also sliced up and soaked in vinegar, water, and splenda.
 
I slice them and pour in salt, pepper, apple cider vinegar, some water and occasionally some sliced onions and fresh garlic, then stick them in the fridge. But I am the only one in the family who eats those, heh. Everyone else thinks they are gross.

I also thin slice them and toss them with ranch, or with italian dressing, or with the above mentioned mix of sour cream and stuff.

I ALSO slice them and eat them on toasted white bread with miracle whip... I do the same thing with fresh 'maters.

A friend of mine used to substitute cuc's for zucchini in her zucchini bread recipe depending on what she had too much of at the time. She never told people she did that, though, for fear that they wouldn't be willing to take the loaf if they knew it was cuc bread not zuc bread. I caught her doing it one day when I dropped in unexpectedly and she swore me to secrecy, so SHHHHHHH! Don't tell anyone I snitched on her!

Personally, my favorite way to dispose of them is to just eat them plain. :D
 
We also have been having cucumbers coming out out our ears! We have been giving them away to family and friends who really enjoy the nice fresh taste of them. Our favorite way of eating them is to slice, add sliced sweet onions and add Ranch dressing. Also just great for snacks dipped in Ranch dressing. Now I wish my tomatos were producing better! Mary
 
Well cucumbers make me vomit (even the smell of them) so I won't be full with ideas but...why not try making cucumber cocktails or any other kind of cucumber drink? There are many alcoholic and non-alcoholic choices to choose from!

Cucumber sandwiches, cucumber bread, cucumber in sauces...basically you can do anything with cucumbers.
 
Send some my way! :bgrin My aunt used to make this stuff that we call cucumber salad. My family is obsessed with it! You skin and cut up about 6 cucumbers (cut them long way in halves twice). Combine 3/4 cup sour cream, 1/4 tsp garlic, 2 tsp sugar, 1 tsp salt, and 1/4 tsp dill. Throw in the cucumbers, refridgerate for about and hour and MMMMMM the best ever!
