I don't do it routinely. I only give when it looks like the foal is uncomfortable, and try to ward off a problem before it gets serious. It puts the needed bacteria into the foals stomach so that it can properly absorb and break down the food it consumes. This is the same reason that foals eat their Mom's poop. They get the needed bacteria into their gut that route.

So I noticed my new colt isn't pooping a lot, should I try giving him some of the Probios or just try an enema? He certainly pees a lot. I noticed him sniffing mom's poop, but he hasn't started eating it.

If it is only that he is not pooping a lot, I would not do anything. There is no need if they are not straining constantly. They need an enema if they are constantly straining, but if it is only because you don't notice him pooping, I would just leave him be.
