Can you give me some good and yummy sweet potatoe recipies or ideas how to make a nice dish up for Thanks Giving. I won't have to cook the whole turkey feast but I volunteered to bring the sweet potatoes....and aside from bringing canned yams...

well, how could you ever beat out candied yams??!!! There are some great variations on those but, all are wonderful.

They are great as a french fry, too. Pre-cook, to not quite done. Slice up, fry up.

This is great for a meal, although I would not recommend for taking off as they are better "freshly" done.

I absolutely love yams......so I'm looking for any good recipe.
 
Well I love yams and sweet potatoes BUT hate that marshmallow cr@p everyone puts on them...

I buy fresh ones either kind or both some years.....I peel then slice into 2 inch chunks toss in cassarole dish sprinkle liberally with cinnamon, nutmeg, and brown sugar add water cover and bake at 350 for a couple hours (till soft). I have done them in a small crock pot on low for the better part of the day (mostly cuz it makes the house smell great) .......you can make mashed potatoes as well with sweet potatoes peel and simmer til soft or bake with skins on then peel and smash add whatever seasonings you like. I also like baked sweet potatoes or yams with a pat of fresh butter........yummm now I want some

Ooohhh what great ideas!!! I like the crock pot idea and never thought to do it that way!!! I can put them on the night before Thanks Giving and they should be done in the morning? I don't like the marshmallows on them either...tooo sugary.

For us here at home I too bake them in the oven and spray on some "I can't believe it's butter" spray...yummy!!!

I'll have to check my recipes but the one we make is this:

Mash the yams like mashed potatoes then mix in an amount of butter. Top with brown sugar, cinnamon and pecans (or walnuts) and bake. Very tasty!
 
This is a fantastic Sweet Potato Souffle receipe that a friend gave me several years ago. You can used canned or fresh.

3 cups cooked sweet potatoes

1/3 cup milk

1 cup sugar

3 beaten eggs

1/2 teaspoon salt

1/3 stick oleo

vanilla

Mix the above ingredients and mash it together (can use an electric mixer). Spread the mashed sweet potatoes in a buttered casserole dish.

Topping:

1 cup chopped pecans

1 cup brown sugar

1/3 cup flour

1/3 cup melted butter

Mix the topping ingredients and spread over the top of the mashed potatoes. Bake at 350 for about 35 minutes.

This is a really good change from the typical "topped with marsh mallows" variety and is a pretty take-out "covered dish". If you decide to try it I hope you enjoy it!!
 
I really like this one (I never did the orange cups, just used a casserole baking dish. Also, we left out the brandy and it was still very delicious):

Brandy and Orange Mash Sweet Potatoes:

7 large sweet potatoes, about 3 pounds

4 large oranges

1 stick unsalted butter

1/2 cup light brown sugar

3 large eggs

3/4 cup fresh orange juice

1/2 cup heavy cream

1/4 cup brandy

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

Preheat the oven to 400 degrees F.

Place the potatoes on a baking sheet and bake until tender, about 1 hour. Remove from the oven and let rest until just cool enough to handle.

Lower the oven to 350 degrees F.

Make the orange cups by cutting the oranges in half and scooping out the pulp, leaving only the shell. Set aside.

While still somewhat hot, peel the potatoes and place in a large bowl. Discard the skins and tough, stringy fibers. Add the butter, and with an electric mixer, beat out the lumps. Add the sugar, eggs, orange juice, heavy cream, and brandy, and mix until smooth. Add the cinnamon, nutmeg, and salt, and mix well. Re-season, to taste.

Spoon the sweet potato mixture into the orange cups, mounding and smoothing the top. Bake until puffed and slightly golden, about 20 minutes.
 
I have made the casseroles but one of my favs is simple................. Bake them in the oven until just a few minutes from being done, cut them in half, stir in butter, top with brown sugar & put back in the oven to finish baking............... The brown sugar takes on a crisp like texture if you use a lot.. If you like cinnamon, sprinkle some on top before adding the brown sugar.............................. I also fix these in the microwave but the sugar melts down into the potato - still yummy though...................... Hungry now for one - gonna go throw one in the microwave to go with my chicken enchiladas.

Sweet Potato Casserole

3 cups mashed sweet potatoes

1/2 cup white sugar

2 eggs well beaten

1/2 stick melted butter

1/2 cup evaporated canned milk

1/2 teaspoon vanilla

1/2 cup mini marshmallows

combine ingredients and pour into casserole

Topping Mix

1 cup brown sugar(well packed)

1/2 cup flour

1 cup coconut

1/2 stick melted butter

Mix well

Sprinkle over mixture in casserole and bake 35 miuntes at 350 degrees
