I know there has to be others here who cook for only 1 or 2 people and I would love to have some new ideas. How about sharing receipes or quick fix ideas.

Tonight I chunked up some ham in a skillet; added a thickly sliced potato and some onion then topped it all with a can of green beans. Covered it and in about 15 minutes had a dinner that I won't still be eating for 3 or 4 days.

Ham or smoked sausage with a can of either hominy or black eyed peas is another quick/easy idea.

Or ham and cabbage, topped with a sliced potato cooks pretty quickly in a covered skillet.

What are some of your quick/easy dinner for 1 (or 2) ideas?
 
Hi Donna, What I do is go to tasteofhome.com I signed up and get their newsletters daily. They have one catagory that is just cooking for 1-2 people. I really like this site, as well as their magazines. They have too many to list on here. Check it out. I think you will like it.

I also do take a lot of recipes and half or quarter them. Lots of them you can.
 
Sometimes cooking more is good.....if you freeze it for later use. I have some divided containers that do well for home-made dinners. Of course, there is always the nice winter soups, chilis, etc.

My little Geo Forman grill works well for these single meal purposes. Individually frozen "things" can be cooked quickly, easily. I've even grilled some veggies on it. Have a couple small crock pots, too. These work like the big ones but, only holds a quart or so. Hey, if you have a crowd, they work great to keep a large amount of veggies, gravy, etc. warm.

I know these aren't recipes but, they might help others to think of quicker, individual meals they have made for selves.

Hi Donna,

One of my most favorite things to make for two is nacho supreme.

Set oven to 400 degrees

1lb hamburger

1 small onion chopped

1/2 green pepper chopped

1 package mild shredded cheddar cheese

tomato -optional

lettuce - optional

taco sauce of your choosing

1 bag scoops or nacho chips of your choice

brown hamburger (drain fat), place a fair amount of scoops on a plate (oven safe), top with hamburger, onion, green pepper and then cheese - place in oven until chees is melted. Top with lettuce and tomato and taco sauce if desired.

This is a quick, easy and delicious dinner!

OKay Donna, here's a breakfast recipe done in a slow- cooker the night before.

SLOW-COOKER APPLE COBBLER

4 medium apples, pared, cored and sliced

2 cups low-fat granola cereal

2 tablespoons honey

2 teaspoons unsalted butter

1/2 teaspoon ground cinnamon

2 cups fat-free milk

Combine apples, granola, honey, butter, and cinnamon in a slow-cooker; cook on LOW overnight.

in the morning, spoon mixture into cereal bowls and serve each portion topped w/ 1/2 cup of milk.

Makes 4 servings

Here's a recipe I've tried a couple of times, and my daughter and I just love it!!! It says it makes 8 servings, but they'd have to be awfully small to get that many! The leftovers reheated the next day are even better!

POTATO BACON CASSEROLE

(From Country magazine, Aug/Sep 2009)

4 cups frozen shredded hash brown potatoes, thawed

1/2 cup finely chopped onion

8 bacon strips, cooked and crumbles (I used the extra thick slices last time!)

1 cup (4 oz) shredded cheddar cheese

1 egg

1 can (12 oz) evaporated milk

1/2 tsp seasoned salt

1. In a greased 8-in. square baking dish, layer half of the potatoes, onion, bacon and cheese. Repeat layers.

2. In a small bowl, whisk the egg, milk and seasoned salt; pour over potato mixture. Cover and bake at 350 degrees for 30 minutes. Uncover; bake 5-10 minutes onger or until heated through.

I really enjoy Taste of Home, too, but yesterday I spent a couple of hours (!) reading recipes on KraftCanada.com. Sooooo many recipes there looked so inviting, dead simple and delicious. I only cook because I have to, so for me to get excited about a recipe or website full of them, says a lot. LOL

I cook for two here as well and freeze many things if I have an over abundance. I'll be watching this thread.
 
I make something in the crockpot that my husband and I just LOVE. I throw 2 to 4 (usually 4 and we have a lot of leftovers) FROZEN (if not frozen, they get a bit too done for my taste) boneless, skinless chicken breasts (I LOVE the Aldi/Kirkwood frozen boneless, skinless chicken breasts), 2 cans of condensed cream of chicken soup, and a can of peas, a can of corn, a can of carrots, and a can of green beans (2 cans drained, 2 cans not, dealer's choice) or 4 cans of mixed vegetables (2 cans drained, 2 cans not) into a crockpot before work. When I get home from work I fish out the chicken breasts and pull them apart, into shreds, with two forks and then I stir them back in and serve. It's a lot like chucky chicken soup. YUMMM!!! Easy, easy, easy!
